Whole30 Round 2, Day 7 {WIAW}

Hey there, hi there, ho there! It is Wednesday…hump day!

I thought that today I would share with you all a day of eats from the craziest day I had planned this week. Not only did I have to work my regular hours on Monday, I also stayed over to help with a school event, which meant that I wasn’t home until about 7pm. Being out of the house for over 12 hours is not normal for me nor is it something I enjoy.

I started Monday with a huge mug of coffee!

Then ate a huge plate of my favorite breakfast.

It was a lot of food, but it helped keep me full until lunch.

After breakfast I got ready to head to work, climbed in my car and…nothing. MY CAR WOULD NOT START!!

Yay Monday.

Gary quickly got dressed and drove me to work. I still made it in time, but I was so stressed. Of course it was a crazy day at work, so my stress level never really came down.

I finally got to enjoy lunch, which was leftovers from the night before. Slow Cooker chili mixed with cauliflower rice, onions and spinach.

Since I knew dinner would be later than usual, I ate a snack right before my evening event.

Once I got home I needed something fast and filling for dinner, so I busted out one of these-

A dash of pepper & paprika before cooking it made it even tastier! Once my hamburger was done cooking, I fried up 2 runny eggs and served it all over a bed of greens.

OHMYGOODNESSGRACIOUS….This dinner totally hit the spot!

Something I have relearned with this 2nd round of Whole30 is that eating a large breakfast is so important because it keeps me full for hours.

  3. I have never purchased the GF beef from TJ’s but I see it all the time!! I actually get my meat on line, ha ha!! Or from Whole Foods when they have their GF beef sales… Love me some ground beef! 😛

  4. Eating a large breakfast is key for me as well – especially with me doing my workouts in the mornings. Some days it doesnt matter – I’ll eat two hours later anyway because my metabolism is just jacked, but for the most part it holds me over for so long! Definietly keeps me away from snacking too much!

  5. Wow, you make whole 30 look very appealing! I think I need to up my breakfast size, because I’m usually hungry a few hours later.
    That dinner looks like the perfect way to end a busy day.

  6. I also started my day with coffee, like I usually do but something new yesterday was a friend of mine bought me a milk frother. Instead of milk, I used my coffee creamer and didn’t need any sweetener. It was great!

  8. My hubby swears by those burgers! I need to try. I am guilty as charged with not eating enough at breakfast. I need to pick it up on that front.

  10. Your meals look good, really good! I like a good sized breakfast to help stay full. Yesterday I was most proud of my tuna salad wrap at lunch that I prepared…first time making tuna without any kind of mayo!

  11. Eating a filling breakfast is always important, but especially so on super busy days. If you don’t fuel your body, it’ll be difficult to get everything done!
