Whole30 Round 2, Day 1 {WIAW}

Since you’re reading this you know I survived Whole30, Round 2, Day 1.

What a day for me to start this journey…it was pretty busy!

I spent this past weekend in Healdsburg & Santa Rosa for Winter WINEland, then got home late Monday afternoon, leaving me not a lot of time for food prep.

But I still roasted 2 trays of sweet potatoes, so breakfast was about 1/2 cup of that mixed with a chicken sausage, topped with sauteed kale & mushrooms and 2 runny eggs.

The drive to work was NUTS! With all the rain {which we need so bad} there was a huge accident on the freeway. So my GPS directed me to drive through the backroads.

That was fun…not…for 3 reasons:

  1. It was still pitch black outside
  2. Some roads were flooded, so I drove very slow, which I know pissed some people off
  3. I missed about 5 turns due to the rain, darkness and me about to lose my mind, so I ended up driving through the shady part of a local city

By the time I got to work I was ready to go home and curl up in a ball for the rest of the day.

Instead I headed to Merced for a 1/2 day training, which meant we ate lunch out.

I had a fajita chicken bowl, but subbed the rice with lettuce and added avocado on the side. So basically it was a bed of lettuce topped with grilled chicken, onions and bell peppers.

Since I was with coworkers, I did not take a photo of my food.

It’s one thing to have your family eat a cold meal because you take 10 minutes to get the perfect shot, but it’s totally rude to do that to the people you work with. 😉

Sadly I was starving less than 3 hours later. So a Larabar and almond butter to the rescue.

Dinner was super quick, easy & delicious! Soup that was made with ground beef and a ton of veggies with roasted sweet potatoes on the side.

So far I am feeling pretty good about my 2nd Whole30. At lunch it was very easy to skip the chip basket. Of course, it was only the first day..ask me how I feel on day 13!

  2. That breakfast looks awesome! I kept yesterdays meals pretty simple. Lunch was leftover lemon artichoke chicken from Practical Paleo and dinner was some chicken drumsticks with salt, pepper, chipotle powder, cumin, garlic powder, and cayenne with a big salad.

  4. I did a whole-30 inspired breakfast last week– roasted sweet potatoes and zucchini, homemade turkey breakfast sausage and a runny egg! Delicious and it kept me full all morning.

  5. Your breakfast looks delicious! The idea of Whole 30 has always appealed to me, mostly because I love eating sweet potatoes and eggs 😉

    The weather has been pretty mild here and we haven’t had our typical downpour that we usually get through January…it’s been awesome!

  8. OOOH i love your breakfast! Runny eggs are my favorite!! I love the Whole 30 recipes but haven’t followed the plan. Looking forward to seeing what you think after more time.

    Less in love with the cold.

    Yesterday was a pretty dull day for eating: farina with local honey, cherry greek yogurt, PB&J with an orange and cheez-its, and a crockpot chicken recipe for dinner. Blah LOL!

  13. So many people have been posting about Whole30 and now I’m contemplating it! I tried it once and it actually wasn’t bad. My main goal right now is finding filling recipes minus carbs like pasta and rice…for some reason when I make foods with veggies I am still SO hungry after dinner!
