Grilled Chicken with Very Berry Salsa

Happy Friday everyone!

For new readers that are here for the #RockYourCore challenge weekly recipe, welcome! For my regular readers, welcome back! 🙂 It’s been awhile since I have posted a new recipe for us all to enjoy!

Very Berry Salsa via Organically Mo

I’m not sure how the weather is where you live, but in California it’s been pretty warm. I’ve been dreaming of salads, salads and MORE salads. And, of course, chicken grilled on the good old BBQ.

This Very Berry Salsa is the perfect addition to grilled chicken, steak, AND veggies. Or you can just eat it with a spoon {in the name of taste-testing, of course}!

Grilled Chicken with Very Berry Salsa

Prep Time: 20 minutes

Cook Time: 1 hour to chill

Ingredients (6-8 servings)

    For the Chicken

    • 6-8 Chicken Breasts
    • 1/2 cup Avocado or Olive Oil
    • 1/4 cup Brown Mustard
    • Salt, Pepper, other spices of your choosing

    For the Very Berry Salsa

    • 2 Tomatoes, diced
    • 1/4 yellow or sweet onion, diced
    • 6-7 Strawberries, diced {about 1 cup}
    • 1 heaping Cup Blueberries
    • Juice of 1 Lime
    • 2 TB Cliantro
    • Touch of salt

    Instructions

    For the Salsa

    Add tomatoes, onion, strawberries and blueberries to a large bowl

    Using a large spoon, mix together

    Add lime juice, salt and 1TB cilantro

    Mix again

    Cover and let sit in refrigerator for at least an hour

    Before serving, add the other 1TB cilantro

    For the Chicken

    Pre-heat your grill

    Add chicken, oil, mustard and spices to large mixing bowl.

    Using tongs, mix together, making sure each breast is coated

    Using tongs, add chicken to the grill and let cook for 5 minutes

    Flip, cook another 5 minutes. Flip once more and cook another 5 minutes

    Check to see if done. If not, flip and cook a few minutes more.

    Every grill is different with temp and cooking time, but make sure your chicken has an internal temperature of at least 160 degrees.

    For Both

    When chicken is done cooking, top with 1/4 cup {or more} of salsa

    You can always add some diced jalapenos to spice the recipe up, but I was aiming for a lighter, sweeter salsa.

    PS- thanks to my dad for cutting up the onions & tomatoes. I may have creative recipe ideas, but I do not excel in the art of dicing vegetables and making them look pretty! Don’t worry…he was paid in salsa!
