3:33 AM Monday Morning

3:33 AM.  That’s the time I finally got out of bed Monday morning.

I say finally because I saw the clock move from 2:15 – 3:33.  I finally couldn’t stand just laying there in bed, so I got up, grabbed a large mug of coffee and spent some time on social media before getting dressed for TRX.

My Monday morning TRX class was FULL of cardio.  We probably spent over half the class off the bands and doing some tabata training. It was killer, but totally got my heart rate up for the rest of the day.

Doing so much cardio made class go by quick & before I knew it, it was time to head to work.  After getting changed at work, I ate 3 of my Pumpkin Pancakes with 2 fried, runny eggs on top.  I guess I was starving because I didn’t take  photo until literally the last bite!

My morning snack was a huge organic apple with some almond butter.

Lunch was leftovers from last night.  These short ribs are the bomb diggity! I also had a side of leftover roasted eggplant, which were seasoned perfectly!

Afternoon snack was a persimmon from my mom & dad’s backyard.

I’m pretty busy at work right now.  Our Winter Homecoming is next week, so my Activities Office is abuzz with kids coming in to nominate each other for Homecoming King & Queen, along with other fun Homecoming happenings.

Once I got home, I went through some clothing drawers in our room, getting rid of more clothes!

For dinner I cooked up some new-to-me quinoa noodles and topped it with spinach leaves, homemade sauce & nutritional yeast {after I took the photo}….I am LOVING “nooch” and cannot wait to get more creative with it!

I also made some crescent rolls we had leftover from the holidays…total splurge & totally worth it!  On the side I threw together a bagged salad I bought at Safeway this weekend.

It was pretty good, but I prefer making my own salads.

Even after that large meal, I was still hungry.  I stuck to my guns though and drank water the rest of the night knowing I’d be in bed soon.

After dinner {and while I was dreaming of a sweet chocolate cake}, we caught up on Revenge. The 2nd season is not as exciting and a bit all over, but we are sticking with it.

  2. I couldn’t sleep Sunday night either. But instead of getting out of bed, I took more NyQuil and called in sick to work. Ugh, I cannot shake this bug.

    My ideal salad is a chopped salad (everything is small pieces, no huge pieces of lettuce) with grilled chicken, jicama, corn, black beans, tomatoes, roasted red peppers, tortilla strips, black olives, avocado, red onions, and a tequila lime dressing. Pretty much the Santa Fe Chicken salad from Jacks Urban Eats in Sacramento 🙂

    I am putting the short ribs in the crockpot right now! So excited! And I have some leftover brown rice couscous and roasted butternut squash to serve it with!
