Back To Reality

I’ve enjoyed 3 long weeks off work, but today I am back to reality.

Back to my 4am alarm, 5am TRX class and working from before the sun comes up to getting home when the sun is getting ready to set.

As bad as that sounds, I truly like a routine, so I’m sure after the initial shock, I’ll be back in the swing of things.

But let’s go back and talk about what a great weekend it was!

Saturday Gary & I spent a few hours going through our filing cabinet and organizing a lot of paperwork.  There was paperwork from almost 10 years ago in there…wow!  I found copies of my resume and job applications from the early 2000’s, when we moved to the Central Valley.  I applied for at least 10 jobs before finding one at my current employer.  I also found pay stubs from when I first started out here.  Sadly, between pay cuts and furlough days, my pay today is very close to what it was 9 years ago.  So for those of you who think school employees are rolling in the dough, think again!

After getting ourselves a but more organized, we showered & headed to our FAVORITE brew house  Dust Bowl, for dinner! We haven’t been there since November…craziness!

I think our theme for the night was “comfort food.”  We shared a basket full of fresh chips to start with, then Gary moved on to a meatloaf sandwich.  I opted for a grilled cheese sandwich with a side of tomato bell pepper soup.  I seriously have not had a grilled cheese sandwich since December 2011. {Maybe not eating so damn many of these has helped me keep my weight loss off….just a thought}

We both enjoyed the Chocolate Coffee Porter…my favorite DB creation!  Not sure if it was too much beer or eating that sandwich, but I was up ALL night with acid reflux.  At one point I tried to sleep while sitting up on the couch.  That was around 1:30am.  I finally was able to get to sleep by 3:45ish, and my alarm went off at 6:45.

As soon as I woke up, I downed about 3 cups of coffee.  The I proceeded with food prep for the week.

First up was my Paleo Pumpkin Pancakes, which we’ve been craving for a few weeks.

I made enough so we can each have 3 pancakes along with a fried egg for the next week and a half.  It’s so easy to freeze these pancakes.  Wrap 3 in wax paper, making sure each is separate from the others, then store in a plastic bag.  These are perfect for me to bring to work fir a healthy, fast breakfast.

Then I started on chopping veggies for the week.  Here’s proof of some of my hard work:

I even scrubbed some persimmons to snack on this week.

For lunch I blended us some chocolate banana mango protein shakes.  It totally hit the spot!

Notice the San Jose Sharks tumbler??  Well, NHL hockey is back & I am READY!!!

For dinner, I finally tried my hand at a roasted veggie/sausage recipe I dreamed about when I went grocery shopping last week.

It was delicious, so I will post the recipe later today.

I spent the rest of the night relaxing and preparing my bags for TRX & work.

So it may be back to reality today, but at least I now have the weekends to look forward to again!

  5. I’m a schedule kind of person too. I love having time off but I always feel off my game and always ready to get back on track!
